Better than beans or rice
Blind baking pie or tart shells is usually a two-step process. The raw shell is filled with something to weigh it down and baked for a few minutes to firm it up. Then the weights are removed and the shell goes back to the oven to crisp. These baking "beans" are metalic shot. You line the raw shell with something like a coffee filter, fill with these beans, and bake. The advantage to them is that the metal heats up so you just do the first bake, until the shell is set and starting to brown. Then you just remove the shell from the oven, leave the beans in place, and let the whole thing cool. The residual heat in the metalic beans finishes the cooking. Much more reliable and less prone to shrinkage than removing the weights and going for a second bake.
