Great little toasting pan
Purchased this as a replacement for a toasting pan I purchased years ago that was starting to fall apart from use. I am delighted with it! It is a little heavier than the one I am replacing. Definitely attractive. It will take a light touch (to toast a small amount of seeds and nuts or bloom spices, nothing heavier), but it is still more substantial than the one I had. It isn't normal pan gauge metal which I don't think I would want b/c the heat retention in heavier metal would be different and longer. The latch can be bent back in a little if the screen is not holding closed--it's a simple tension lock. I had to do that with my other pan every once in awhile. It's a fun and convenient little pan to have on hand. :-)

The right tool for the job
This is exactly what I wanted for toasting sesame seeds, pine nuts, etc. for salads and stir fry. I was surprised that our local Asian market didn’t have these along with all the other stuff they had.

Not bad but could be better.
I bought this pan to toast sesame seeds after seeing it demonstrated on the NHK cooking program. I previously used a very small cast iron skillet to toast the seeds and it did a perfect job but as the seeds get hot, many of them 'pop' out of the pan wasting the expensive seeds and making a mess so this pan with a snap down mesh lid seemed like a perfect solution. Let me say it does work but there are some negative aspects about it; it could be better. PROS: 1. Though it could be heavier, I was impressed that the metal was not as flimsy as I feared it would be and the mesh 'lid' snaps down fairly securely to contain the seeds. 2. The handle is long and stays surprisingly cool during the toasting process. 3. The pan is a pretty good size - 4 1/2" wide x 1" deep - you can toast anything from a couple of tablespoonfuls to about 1/2 cup of sesame seeds. 4. The metal is of a weight that cools off quickly and helps prevent over-browning the seeds (cast iron retains heat longer and the seeds continue cooking even after you remove it from the heat so you have to remove it from the stove slightly before they are done); with this pan, when you remove it from the heat, the cooking pretty well stops. CONS: 1. Though not flimsy, the metal does not retain the heat as well as my cast iron pan so it's harder to control the heat under the pan. Too low and the seeds take forever to toast (though ones in constant contact with the pan will burn), too high and you will scorch and burn them. Even on low heat you need to shake the pan fairly constantly otherwise the seeds along the edges and very bottom will burn easily. Though the lid does snap down well, the amount of shaking needed to keep the seeds moving to prevent scorching is enough to fling a surprising number of the seeds out between the minute gap around the perimeter of the lid and pan making a mess and wasting seeds which is why I bought this pan in the first place. If you need 2 tablespoons of seeds for a recipe, I don't want to lose a quarter of them through the toasting process. I must admit, I have gone back to using my open small cast iron pan. The Endurance pan might work for chopped nuts though, I will try it when my holiday baking season starts.

Cheap and Lid Pops Off When Heated
The lid pops off when you heat your seeds, and if you try to put it back on, you burn your finger. Really tinny, cheap metal. Still search for something a little more durable that works with a lid that stays shut when toasting.

It’s great to toast seeds, and so much more!
It’s a seed toaster - not think and slightly expensive-but I use it for tempering food in Indian and Asian cooking and the netted lid is ideal to prevent build up of moisture, spices and hot oil don’t pop out. Leaves the hob much cleaner as a result. This is my third purchase- gifted it to my friends!
