Great Mat for the Price
Ive had this mat for several months now and have used it several dozens of times at least, I bake a lot, a few times a week at least. I have used it in ovens with temperatures ranging from 300 to 415 degrees and I have never had a problem. I normally use it on the middle or top racks. My main baking oven is less than 2 years old and my extra oven is about 5 years old, the reason Im mentioning this is I wonder if the different oven types have something to do with the problems people seem to be having. The first thing I did when purchasing the mat was hand wash it which is what you are told to do in the paper I got with my mat. There was a very slight smell the first few times I used it (which the paper also mentioned), like many products made of the same material, after that nothing but the smell of fresh baked goods. As I said in the review this one is replacing, the mat does not clean as easily as you would think, often after putting it in the dishwasher there is an oily residue left behind and it takes a very good liquid dish detergent to get rid of it or if you are in a hurry like me, use a little vinegar on a dishcloth. At one time I even burned a dozen cookies on the mat because my dog decided he wanted to play with the UPS guy and wouldnt let him near our door so I was distracted. The burned discoloration on the mat went away after I washed the mat and I honestly thought I had ruined it so I breathed a sigh of relief that it came clean. I also own the more expensive versions of this type of baking mat by other companies and other than them being slightly thicker, I see no difference in the way that they work. Since purchasing this mat I have also bought this same brand mat in other styles and sizes from other retailers.

I bought this for my skeptcal wife, and it won her over. Her cookies, which have always been great, are even better now with this sheet. I kneed dough on the mat. It reduces the need for excess flour and makes cleanup a breeze. Today I baked french fires on it and they came out great and cleanup was reduced to almost nothing. Using it as a liner for grilling fish has impressed me the most. We bought a nonstick sheet specifically designed for grilling fish in our gas grill. Unfortunately the fish stuck horribly. Now I use the same sheet, cover it with aluminum foil (the sheet has holes and I want to keep the matfer from being directly exposed to the flame) then lay the matfer on top of that and set the fish on the matfer. The fish cooks great, even carmelizes, looking like it is badly stuck to the mat, but it release cleanly and cleans up easily. This did slightly discolor the mesh inside the mat, but has not affected the performance of the mat at all. A word of caution. This mat sticks to the counter pretty well to use as a work mat, but I ordered a larger mat with silicone on both sides to use strictly for a work surface. The silicone backed mats stick very, very well to the counter. Also, this is just common sense (which I sometimes lack) but do not try to bake pizza or anything like it on this if you want it to have a crisp crust. I love this product and have ordered more.

Stuck scrubbing cookie sheets for hours??
I've never used a sheet like this or parchment paper, and always ended up having to spend a lot of time scrubbing my cookie sheets after baking. I got one of these matfer sheets recently and I'm in love! At first it looked a little scary - it looks plastic and like it would melt. Since I am a novice chef, I tend to burn things and I have melted plastic in my oven before - not a pretty sight! I was happy to find out that not only does it NOT melt, but NOTHING sticks to this thing. Nothing! My cookies slide off easily, so easily that I don't even have to hold down the cookie sheet! I also have used it when baking pies and cobblers, since they tend to boil over and make a mess. Recently I made a cherry cobbler and put this sheet between the cobbler and the baking sheet - and after the cobbler was done the matfer was a mess (but my baking sheet was pristine!). I ran a little water over the matfer, all the cherry goo came off with ease! I didn't even have to scrub! Another bonus is how easy these are to store. I just roll mine up and they fit neatly in a drawer. I bought two for myself, and I also bought a half dozen more that I am giving away for Christmas this year. They are AMAZING sheets, I highly recommend them to anyone! Well worth the cost - one of the greatest kitchen investments you'll ever make!

Exopat vs. Silpat
I bought one each of these brands back in 2005. I prefer the Exopat only because I like the color better. It's possible that product quality has changed in the last two years, but I haven't experienced any of the problems others have noted with either sheet. The Silpat has some round, cookie sized stains on it, but I don't really recall how that happened. Perhaps if I had used the Exopat for that particular batch, it would have the stains. Both mats have performed flawlessly for hundreds of uses. Some have complained that they can't get the oil residue off the mats. That's not oil residue--that's just the nature of the material. They have an oily feel even when spotlessly clean. Some have complained about smoke. I've never seen that problem. Some people say the Silpat feels thicker. I'll agree that it does seem a little thicker. It makes no difference with respect to performance, but if a thicker feel means something to you, then go for it. The complaints about size are correct for both products. These are made for true 1/2 size baking sheets, which you won't usually find at Walmart or places like that. You need to get some 1/2 size sheets to use these. (I bought mine at Sams.) In brief, there is no difference in performance between these two brands. Both are amazing and exellent products IMHO. If color or heft are important to you, then pick accordingly. Otherwise, go with price.

Worth it, easy to use!
We've owned this thing for less than a week and couldn't wait to try it. We made bread/buns on it, fries, toffee, multiple types of cookies... mmmm cookies. It's really great! Nothing sticks to it. Everything comes off with no problem and the bottom of the cookies has a nice imprint of the mesh-look. It didn't work so well for making oven fries -- the silicone bit insulates the fries a bit so they don't get a chance to "fry". It's a lot easier to use than parchment paper since it doesn't roll up on its own and you can put it directly on the pan, assuming your pan is the right size for the mat. My mom says she can tell by feeling it, but I think it's a subtle difference for when there's still oil on it or not since the mat itself is naturally a bit slippery. After cleaning, it's easy to roll up the mat and put it away for next time. We only got 1 mat to try it out first, but I'm pretty sure we'll be picking up a couple more now that we know what it's strengths are. I want to have a couple so that when one set of cookies comes out of the oven, they can cool on the mat & cookie tray while another set goes in. Definitely worth the cost!

The silicon mat was not covered with even coat of silicon, one side was thicker then the other. There was a little tear or rip at one corner after exhanged for the second product because the first one was ripped at one corner.
